Mini Farm
Anna Derby from Mutual 5 enjoys observing mindfulness while gardening in her Mini Farm plot.
It helps Derby forget about the anxiety and uncertainty surrounding the pandemic. She appreciates planting vegetables and watching them grow with sun, water and patience, until they are ready to enjoy at the dinner table.
When Derby was recently planting seeds in her garden, she realized she needed to harvest some of the vegetables to make room. She pulled soft, fresh and tasty vegetables to make a kimchi dish. Derby says there’s nothing like eating something you’ve grown yourself. Over the last few years, Derby has grown organic lettuce, zucchini, red peppers, cucumbers, kale, broccoli, Chinese cabbage, Korean yulmu, leafy radish, spinach, leaf mustard, and corn.
